Ingredients

  • 4 pieces (about 6 ounces each) salmon fillets (skin-on or skinless)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium yellow onion (finely chopped)
  • 3 cloves garlic cloves (minced)
  • 1 14-ounce can canned diced tomatoes (undrained)
  • 2 tablespoons capers (drained and rinsed)
  • 0.25 cup white wine or chicken broth
  • 2 tablespoons fresh parsley (chopped, for garnish)
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Pat the salmon fillets dry with paper towels. Season both sides with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Once hot, add the salmon fillets, skin side down if applicable. Cook for 4-5 minutes without moving, until the skin is crispy and the fillets release easily from the pan. Flip the fillets and cook for another 2-3 minutes until the salmon is just cooked through. Remove the salmon from the skillet and set aside on a plate.

Step 3

Reduce the heat to medium and add the butter to the skillet. Once melted, add the chopped onion and sauté for 3-4 minutes until softened and fragrant.

Step 4

Add the minced garlic and cook for another 30 seconds, stirring constantly to avoid burning.

Step 5

Pour in the diced tomatoes (with their juices), white wine or chicken broth, and the remaining 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Stir in the capers and red pepper flakes, if using. Bring the sauce to a simmer and cook for 5 minutes, allowing the flavors to meld.

Step 6

Return the salmon fillets to the skillet, spooning some of the sauce over the top. Cover and cook for 2-3 minutes, just until the salmon is warmed through.

Step 7

Remove the skillet from the heat and garnish with fresh parsley.

Step 8

Serve the salmon fillets with the tomato caper sauce spooned over the top. Pair with steamed vegetables, rice, or a simple side salad for a complete meal.
