Ingredients

  • 15 oz canned salmon
  • 1 large egg
  • 2 green onions, finely chopped
  • 0.5 red bell pepper, finely diced
  • 1 cup breadcrumbs
  • 0.25 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 0.5 tsp garlic powder
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil

Directions

Step 1

Drain the canned salmon and remove the skin and bones if desired. Place the salmon in a large mixing bowl.

Step 2

Add one large egg to the bowl and mix gently to combine.

Step 3

Add the finely chopped green onions and diced red bell pepper into the bowl with the salmon.

Step 4

Add breadcrumbs, mayonnaise, Dijon mustard, lemon juice, garlic powder, paprika, salt, and black pepper to the bowl.

Step 5

Mix the ingredients well until fully combined, making sure the mixture is cohesive and holds together.

Step 6

Form the mixture into 8 equal-sized patties, about 1/2 inch thick.

Step 7

Heat olive oil in a large skillet over medium heat.

Step 8

Once the oil is hot, add the patties to the skillet (in batches if necessary, to avoid overcrowding) and cook for about 3-4 minutes on each side, or until golden brown and heated through.

Step 9

Remove the cooked salmon croquettes from the skillet and drain on paper towels.

Step 10

Serve warm, garnished with fresh lemon wedges or a dollop of tartar sauce if desired.
