Ingredients

  • 500 grams salmon fillets (skinless, boneless)
  • 65 grams panko breadcrumbs
  • 1 unit egg (large)
  • 1 tablespoon dijon mustard
  • 2 stalks green onion (finely chopped)
  • 1 unit garlic clove (minced)
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)
  • 120 grams mayonnaise
  • 60 grams plain Greek yogurt
  • 2 tablespoons fresh parsley leaves
  • 2 tablespoons fresh basil leaves
  • 1 tablespoon fresh chives
  • 1.5 tablespoons lemon juice
  • 1 unit garlic clove (for sauce)
  • 0.25 teaspoon salt (for sauce)
  • 0.25 teaspoon black pepper (for sauce)
  • 4 units hamburger buns
  • 4 units lettuce leaves (optional)
  • 4 slices sliced tomatoes (optional)

Directions

Step 1

Cut the salmon into large chunks. Add half of the salmon to a food processor and pulse until it forms a paste-like consistency.

Step 2

Add the remaining salmon pieces to the food processor and pulse a few times until coarsely chopped. Avoid over-processing.

Step 3

In a large mixing bowl, combine the processed salmon, panko breadcrumbs, egg, Dijon mustard, green onions, minced garlic, lemon zest, salt, and black pepper. Mix until just combined.

Step 4

Divide the salmon mixture into 4 equal portions and shape into patties about 1 inch thick. Place patties on a plate and refrigerate for 10-15 minutes to firm up.

Step 5

While the patties are chilling, make the Green Goddess Sauce. In a food processor or blender, combine mayonnaise, Greek yogurt, parsley, basil, chives, lemon juice, garlic, salt, and black pepper. Blend until smooth. Transfer to a small bowl and set aside.

Step 6

Heat olive oil in a large non-stick skillet over medium heat. Add the chilled salmon patties and cook for 4-5 minutes per side, or until golden brown and cooked through.

Step 7

Lightly toast the hamburger buns if desired. Assemble the burgers by layering each bun with a lettuce leaf, a cooked salmon patty, a slice of tomato, and a generous dollop of Green Goddess Sauce.

Step 8

Serve immediately and enjoy your homemade Salmon Burgers with Green Goddess Sauce!
