Ingredients

  • 2 medium Sweet potato
  • 300 grams Salmon fillet
  • 1 large Egg
  • 1 cup Bread crumbs
  • 2 stalks Green onion
  • 1 large Garlic clove
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 teaspoon Smoked paprika
  • 3 tablespoons Olive oil
  • 1 teaspoon Lemon zest

Directions

Step 1

Peel and dice the sweet potatoes into 1-inch cubes. Place them in a pot of boiling water and cook for 10-12 minutes, or until fork-tender. Drain and mash until smooth. Set aside to cool slightly.

Step 2

While the sweet potatoes are cooking, check the salmon fillet for any bones and remove them if necessary. Place the salmon in a baking dish and bake at 375°F (190°C) for 12-15 minutes, or until cooked through and flakey. Let it cool, then flake the salmon into small pieces with a fork.
