Ingredients

  • 12 oz Penne pasta
  • 12 oz Salmon fillet (skinless)
  • 4 cups Baby spinach
  • 1 cup Basil pesto
  • 0.5 cup Heavy cream
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 Garlic cloves (minced)
  • 0.5 cup Parmesan cheese (grated)
  • 1 tbsp Lemon juice
  • 0.25 tsp Red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the salmon fillet with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Cook the salmon for 3-4 minutes per side, or until cooked through and easily flakes with a fork. Remove from the skillet, flake into bite-sized pieces, and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Add the baby spinach to the skillet and sauté for 2-3 minutes until wilted.

Reduce the heat to low and stir in the basil pesto and heavy cream. Mix until combined and smooth. If the sauce is too thick, add a splash of the reserved pasta water until it reaches the desired consistency.

Stir in the cooked pasta, flaked salmon, and lemon juice. Gently toss everything to coat evenly in the sauce. Taste and adjust seasoning with additional salt and pepper, if needed.
