Ingredients

  • 500 grams Cheese tortellini
  • 250 grams Salmon fillet
  • 3 tablespoons Fresh dill
  • 4 tablespoons Extra virgin olive oil
  • 2 tablespoons Lemon juice
  • 1 unit Garlic clove, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 100 grams Baby spinach
  • 150 grams Cherry tomatoes, halved
  • 0.5 unit Red onion, thinly sliced
  • 2 tablespoons Parmesan cheese, grated

Directions

Step 1

Bring a large pot of salted water to boil and cook the cheese tortellini according to the instructions on the package. Drain, rinse with cold water, and set aside to cool.

Step 2

While the tortellini cooks, season the salmon fillet with a pinch of salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the salmon for 3-4 minutes per side, or until it flakes easily with a fork. Let it cool slightly, then flake it into bite-sized pieces.
