Ingredients

  • 500 g Potatoes
  • 250 g Salmon fillet, cooked and flaked
  • 3 tbsp Fresh dill, chopped
  • 2 Green onions, finely sliced
  • 1 large Egg
  • 3 tbsp All-purpose flour (plus extra for dusting)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 3 tbsp Olive oil (for frying)
  • 5 tbsp Mayonnaise
  • 1 tbsp Lime juice
  • 0.5 tsp Lime zest
  • 1 tbsp Optional: extra dill for garnish

Directions

Step 1

Peel the potatoes and cut them into chunks. Boil in salted water until tender, about 10-12 minutes. Drain well and mash until smooth. Let them cool slightly.

Step 2

In a large mixing bowl, combine the mashed potatoes, flaked salmon, chopped dill, green onions, egg, flour, salt, and black pepper. Mix well until all ingredients are evenly combined.

Step 3

Shape the mixture into 8 patties (roughly the size of your palm). Dust each patty lightly with flour to help them hold their shape during cooking.

Heat olive oil in a large skillet over medium-high heat. Fry the patties in batches, about 3-4 minutes per side, until golden brown and heated through. Remove and set on a plate lined with paper towels to absorb excess oil.
