  • 300 g fettuccine pasta
  • 200 g salmon fillet (skinless)
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 3 cloves garlic (minced)
  • 200 ml heavy cream
  • 50 g parmesan cheese (grated)
  • 3 tbsp fresh dill (chopped)
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 0.5 tsp black pepper (freshly ground)
  • 3 l water
  • 1 tbsp salt (for pasta water)

Directions

Step 1

Boil a large pot of water (3 liters) and add 1 tablespoon of salt. Cook the fettuccine according to the package instructions until al dente. Drain and reserve 1 cup of pasta water. Set the pasta aside.

Step 2

While the pasta cooks, heat a large skillet over medium heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter.

Season the salmon fillet with a pinch of salt and black pepper. Place it in the skillet and cook for 3-4 minutes per side, until fully cooked and flaky. Remove the salmon from the skillet and set aside.

In the same skillet, melt the remaining 1 tablespoon of butter. Add the minced garlic and sauté for 1 minute, until fragrant.
