Ingredients

  • 500 grams Fresh salmon fillets (skinless)
  • 120 grams Panko breadcrumbs
  • 2 tablespoons Fresh dill (chopped)
  • 2 stalks Green onions (sliced thin)
  • 2 cloves Garlic (minced)
  • 1 large Egg
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Mustard (Dijon recommended)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil (for frying)
  • 1 whole Lemon wedges (for serving)

Directions

Step 1

Cut the salmon fillets into small chunks and place them in a food processor. Pulse several times until coarsely chopped. Do not over-process; you want a chunky texture, not a paste.

Step 2

In a large mixing bowl, combine the chopped salmon with the panko breadcrumbs, fresh dill, green onions, minced garlic, egg, mayonnaise, Dijon mustard, salt, and pepper. Mix until just combined.

Step 3

Divide the mixture into 4 equal portions and shape each into a patty or cake, about 2 cm thick. Place the patties on a plate, cover, and refrigerate for 15 minutes to help them hold their shape.

Step 4

Heat the olive oil in a large skillet over medium heat. Once the oil is shimmering, carefully add the salmon patties to the skillet.

Step 5

Cook the patties for 3-4 minutes per side, or until golden brown on the outside and cooked through on the inside.

Step 6

Remove the patties from the skillet and drain on a paper towel-lined plate.

Step 7

Serve immediately with lemon wedges on the side. Optionally, serve on a bun with your favorite toppings or alongside a salad for a lighter option.
