Ingredients

  • 350 grams Salmon fillet (skinless)
  • 150 grams Plain couscous
  • 200 ml Boiling water
  • 2 large Eggs
  • 150 grams Greek yogurt (plain)
  • 100 grams Frozen peas
  • 75 grams Feta cheese (crumbled)
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Lemon zest
  • 1 tablespoon Olive oil
  • 1 sheet Puff pastry sheet
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Milk (for egg wash)

Directions

Step 1

Preheat your oven to 190°C (375°F) and line a round pie dish or 9-inch tart pan with parchment paper.

Step 2

Place the couscous in a heatproof bowl, pour over the boiling water, cover with a plate, and let sit for 10 minutes. Fluff with a fork and set aside.

Step 3

In a skillet over medium heat, add the olive oil and cook the salmon fillet for 3-4 minutes per side until just cooked through. Break it into flakes with a fork and set aside to cool slightly.

Step 4

In a large mixing bowl, whisk together the eggs and Greek yogurt until smooth. Stir in the feta cheese, peas, parsley, lemon zest, salt, and black pepper.

Add the flaked salmon and couscous to the egg mixture and gently fold together until well combined.

Roll out the puff pastry sheet on a lightly floured surface. Gently press it into the prepared pie dish, allowing the excess to hang over the edges.
