Ingredients

  • 2 pieces (5-6 oz each) Salmon fillet
  • 12 pieces Asparagus spears
  • 4 pieces Soft tortillas
  • 4 tablespoons Cream cheese
  • 2 teaspoons Dijon mustard
  • 1 piece (zested and juiced) Lemon
  • 0.5 teaspoons Garlic powder
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Fresh parsley (chopped)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.

Step 2

Rinse the asparagus spears, trim the tough ends, and pat them dry. Toss the asparagus with 1 tablespoon of olive oil, 1/4 teaspoon of salt, and a pinch of black pepper.

Step 3

Place the salmon fillets on the baking sheet. Drizzle them with the remaining 1 tablespoon of olive oil and season with garlic powder, 1/4 teaspoon of salt, and a pinch of black pepper.

Step 4

Arrange the asparagus spears around the salmon fillets on the baking sheet and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

While the salmon and asparagus cook, prepare the spread by mixing the cream cheese, Dijon mustard, lemon zest, lemon juice, and parsley in a small bowl.
