Ingredients

  • 1 lb salmon fillet
  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 3 pieces garlic cloves, minced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 cup Italian seasoned breadcrumbs
  • 1 cup shredded mozzarella cheese
  • 1 as needed cooking spray

Directions

Step 1

Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch casserole dish with cooking spray.

Step 2

Cook the penne pasta according to package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Season the salmon fillet with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper, then sear the salmon for 3-4 minutes on each side, or until fully cooked. Remove the salmon from the skillet, allow it to cool slightly, then flake it into bite-sized pieces.

Step 4

In the same skillet, melt 3 tablespoons of unsalted butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Step 5

Slowly pour in 2 cups of heavy cream, stirring continuously. Bring the mixture to a gentle simmer.

Step 6

Stir in 1 cup of grated Parmesan cheese until fully melted and the sauce is smooth. Season with the remaining 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Remove the skillet from heat.

Step 7

In a large mixing bowl, combine the cooked penne pasta, flaked salmon, and Alfredo sauce. Toss until everything is evenly coated.

Step 8

Pour the mixture into the prepared casserole dish and spread it out evenly.

Step 9

Sprinkle the shredded mozzarella cheese over the top, followed by the Italian seasoned breadcrumbs.

Step 10

Bake the casserole in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.

Step 11

Garnish with the chopped fresh parsley before serving. Serve hot and enjoy!
