Ingredients

  • 250 grams spaghetti
  • 200 grams salmon fillet, skinless
  • 4 tablespoons extra virgin olive oil
  • 4 items garlic cloves, thinly sliced
  • 1 teaspoon red chili flakes
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 30 grams parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, freshly ground
  • 2 liters water for boiling pasta

Directions

Step 1

Bring 2 liters of water to a boil in a large pot and add 1 teaspoon of salt. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining the spaghetti.

Step 2

While the pasta is cooking, season the salmon fillet with a pinch of salt and black pepper on both sides.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the salmon and cook for about 3-4 minutes per side until fully cooked through and golden. Remove the salmon from the skillet and set aside.

Step 4

In the same skillet, add the remaining 2 tablespoons of olive oil followed by the sliced garlic. Reduce the heat to low and sauté the garlic until it becomes golden and fragrant, about 2-3 minutes. Be cautious not to burn the garlic.

Step 5

Add the red chili flakes to the garlic oil and stir for 30 seconds to release their flavors.

Add the lemon zest, lemon juice, and 2 tablespoons of reserved pasta water to the skillet. Toss well to combine and adjust the consistency as needed by adding more pasta water.

Remove the skillet from heat and garnish the pasta with grated parmesan cheese and fresh parsley.
