  • 2.5 cups Chicken or vegetable broth
  • 0.5 cup Dry white wine
  • 2 tablespoons Unsalted butter
  • 0.5 cup Grated Parmesan cheese

  • 1 small Shallot, finely chopped
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley or chives (optional, for garnish)

Directions

Step 1

In a large microwave-safe bowl, combine the olive oil, minced garlic, and chopped shallot. Microwave on HIGH for 1 minute, until fragrant and softened.

Step 2

Add the Arborio rice to the bowl and stir to ensure the rice grains are coated in the oil mixture.

Step 3

Pour in the dry white wine and microwave on HIGH for 2 minutes. Stir the rice to allow it to absorb the wine.

Step 4

Add 1.5 cups of chicken or vegetable broth to the bowl. Stir, then cover the bowl loosely with a microwave-safe lid or plastic wrap. Microwave on HIGH for 6 minutes.

Step 5

Stir the rice and add another 1 cup of broth. Cover again and microwave on HIGH for another 6 minutes.

Check the rice for doneness. If it’s still too firm, add an additional 1/4 cup of broth and microwave in 2-minute intervals, stirring after each, until the rice is tender but slightly al dente.
