In a large mixing bowl, combine the ground beef, breadcrumbs, egg, ketchup, Worcestershire sauce, yellow mustard, salt, and black pepper. Mix until well combined but do not overwork the meat.
Divide the mixture into 4 equal portions and shape into oval patties about 1/2 inch thick.
Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the patties to the skillet and cook for 3-4 minutes on each side, until browned. Remove the patties and set aside.
In the same skillet, reduce the heat to medium and add the remaining olive oil and butter. Sauté the onion slices for 2-3 minutes until softened, then add the mushrooms and cook for an additional 5-6 minutes until tender.
Sprinkle the flour over the onion and mushrooms, stirring well to coat. Cook for 1-2 minutes to remove the raw flour flavor.
Slowly pour in the beef broth while stirring to prevent lumps. Add the soy sauce and garlic powder, then bring the mixture to a simmer and cook for 2-3 minutes to thicken the gravy.
Return the browned patties to the skillet, spooning some of the gravy over them. Cover the skillet with a lid, reduce the heat to low, and simmer for 15-20 minutes, allowing the flavors to meld and the patties to cook through.
Serve the Salisbury steaks hot with the mushroom gravy spooned on top. Enjoy with mashed potatoes or steamed vegetables for a complete meal.
