In a large mixing bowl, combine the ground beef, breadcrumbs, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, egg, salt, and black pepper. Mix until evenly combined.
Divide the beef mixture into 4 equal portions and shape them into oval patties about 3/4-inch thick.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the patties on both sides until browned, about 3-4 minutes per side. They do not need to be fully cooked at this point. Transfer the patties to a plate and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter. Reduce heat to medium and add the sliced mushrooms. Sauté the mushrooms until golden and tender, about 5 minutes.
Add the chopped shallot and minced garlic to the skillet with the mushrooms. Cook for an additional 2 minutes, stirring frequently.
Pour the red wine into the skillet to deglaze, scraping up any browned bits from the bottom of the pan. Simmer for 3 minutes to reduce slightly.
Add the beef broth to the skillet and stir to combine. Return the Salisbury steak patties to the skillet, nestling them into the sauce.
Cover and cook on low heat for 10-12 minutes, or until the patties are fully cooked through (internal temperature should reach 160°F).
In a small bowl, whisk the cornstarch and water together to create a slurry. Slowly stir the slurry into the skillet to thicken the sauce. Simmer for 2-3 minutes until the sauce reaches your desired consistency.
Taste and adjust seasoning if necessary. Garnish with chopped parsley before serving.
Serve hot over mashed potatoes, rice, or egg noodles for a complete and satisfying meal.
