In a large mixing bowl, combine ground beef, breadcrumbs, egg, 1 tablespoon Worcestershire sauce, ketchup, garlic powder, onion powder, salt, and black pepper. Mix until just combined. Divide the mixture into 4 equal portions and shape each into an oval-shaped patty about 1/2 inch thick.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the patties to the skillet and cook for 3–4 minutes per side, or until browned. Remove the patties from the skillet and set aside (they will finish cooking in the gravy).
In the same skillet, reduce the heat to medium and add the remaining olive oil and the butter. Once the butter has melted, add the sliced onion and cook for 5 minutes, stirring occasionally, until softened.
Stir in the mushrooms and cook for another 5 minutes, or until the mushrooms are golden and tender.
Sprinkle the flour over the mushrooms and onions, stirring constantly to coat them evenly. Cook for 1 minute to remove the raw flour taste.
Gradually pour in the beef broth, stirring to combine, and then add 1 tablespoon Worcestershire sauce. Bring the mixture to a simmer, allowing it to thicken slightly.
Return the browned patties to the skillet, nestling them into the gravy. Cover the skillet with a lid and let the patties simmer in the gravy over low heat for 15–20 minutes, or until the patties are cooked through and the gravy is thick and flavorful.
Taste the gravy and adjust the seasoning with additional salt and pepper, if needed.
Serve the Salisbury steaks hot, spooning the mushroom and onion gravy generously over the top. Garnish with chopped fresh parsley if desired. Pair with mashed potatoes, rice, or roasted vegetables for a complete meal.
