In a large mixing bowl, combine the ground turkey, breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Mix until just combined, being careful not to overwork the meat.
Divide the turkey mixture into four equal portions and shape into patties, about 1/2 inch thick.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the turkey patties and cook for 4-5 minutes per side, or until browned and cooked through. Remove the patties from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and chopped onion, and sauté over medium heat for 4-5 minutes, or until the vegetables are softened and the onions are translucent.
Sprinkle the flour over the vegetables and cook for an additional 1-2 minutes, stirring constantly, to remove the raw flour taste.
Slowly pour in the beef broth while stirring to prevent lumps. Bring the mixture to a simmer and stir in the Dijon mustard.
Return the turkey patties to the skillet and spoon some of the gravy over each one. Cover the skillet and let simmer for 10 minutes to allow the flavors to meld.
Taste the gravy and adjust seasoning with additional salt and pepper, if needed.
Serve the Salisbury Steak Turkey patties with the mushroom gravy spooned over the top. Garnish with chopped fresh parsley, if desired. Pair with mashed potatoes or steamed vegetables for a complete meal.
