Ingredients

  • 400 grams spaghetti
  • 150 grams salami (thinly sliced or diced)
  • 4 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 0.5 teaspoon red chili flakes
  • 200 grams cherry tomatoes (halved)
  • 50 grams parmesan cheese (grated)
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.

Step 2

Heat olive oil in a large skillet over medium heat. Add the minced garlic and red chili flakes, cooking for 1-2 minutes until fragrant.

Step 3

Add the salami to the skillet and cook for 3-4 minutes, stirring occasionally, until it begins to crisp up.

Step 4

Toss the cherry tomatoes into the skillet and cook for 4-5 minutes, stirring occasionally, until they soften and release some of their juices.

Step 5

Add the cooked spaghetti directly into the skillet. Toss well to combine, adding a splash of reserved pasta water as needed to create a light sauce.

Step 6
