Ingredients

  • 300 grams Dried figs
  • 100 grams Blanched almonds
  • 100 grams Walnuts
  • 50 grams Dark chocolate (70% cocoa or more)
  • 2 tablespoons Honey
  • 1 teaspoon Cinnamon
  • 0.25 teaspoons Ground cloves
  • 2 tablespoons Unsweetened cocoa powder (for coating)
  • 2 tablespoons Powdered sugar (for coating, optional)

Directions

Step 1

Begin by preparing the dried figs. Remove the stems and chop them roughly into smaller pieces to make them easier to process.

Step 2

In a food processor, add the chopped dried figs and pulse until they form a sticky, coarse paste.

Step 3

In a dry skillet, toast the blanched almonds and walnuts over medium heat for 3-4 minutes until fragrant. Let them cool slightly and then roughly chop them.

Step 4

Melt the dark chocolate gently in a double boiler or microwave in short bursts, stirring frequently, until smooth.

Step 5

In a large bowl, combine the fig paste, chopped nuts, melted chocolate, honey, cinnamon, and ground cloves. Mix well using a spatula or your hands until the mixture comes together into a cohesive sticky dough.

Step 6

Lay out a large piece of plastic wrap on a clean surface. Transfer the fig mixture onto the wrap and shape it into a log around 20-25 cm (8-10 inches) long. Wrap it tightly in the plastic wrap and twist the ends to secure it.

Step 7

Refrigerate the fig salami for at least 2 hours or until firm.

Step 8

Once firm, remove the plastic wrap from the log. Roll the log in unsweetened cocoa powder to coat it evenly. For a sweeter finish, you can also roll it lightly in powdered sugar after the cocoa powder coating.

Step 9

Slice into 1 cm (approximately 1/2 inch) thick rounds to serve. Store any leftovers in an airtight container in the refrigerator for up to 2 weeks.
