Ingredients

  • 6 cups Mixed salad greens
  • 1 cup Cherry tomatoes
  • 1 Cucumber
  • 4 Radishes
  • 8 ounces Goat cheese (log form)
  • 1 cup Sliced almonds
  • 1 Egg
  • 0.5 cup All-purpose flour
  • 0.5 cup Black olives (pitted)
  • 0.25 cup Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry the mixed salad greens, then place them in a large serving bowl.

Step 2

Slice the cucumber into thin rounds and halve the cherry tomatoes. Thinly slice the radishes. Add these to the bowl with the salad greens.

Slice the goat cheese log into 8 equal rounds. Place the flour in one bowl, beat the egg in a second bowl, and place the sliced almonds in a third bowl.
