Ingredients

  • 500 grams white asparagus
  • 100 grams baby arugula
  • 300 grams beefsteak
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 clove garlic clove, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon butter
  • 1 tablespoon fresh parsley, chopped

Directions

Step 1

Trim the tough ends of the white asparagus. Peel the stalks starting just below the tips to the bottom.

Step 2

In a large pot, boil water and add a pinch of salt. Blanch the asparagus for 5–7 minutes until tender but still slightly firm. Drain and set aside.

Step 3

Season the beefsteak with salt and black pepper on both sides. In a skillet, heat 1 tablespoon of olive oil over medium-high heat.
