Ingredients

  • 6 cups Mixed baby greens
  • 1.5 cups Cherry tomatoes
  • 1 large Cucumber
  • 0.25 large Red onion
  • 4 medium Radishes
  • 0.5 cup Crumbled goat cheese
  • 0.25 cup Toasted walnuts
  • 1 teaspoon Dijon mustard
  • 2 tablespoons Red wine vinegar
  • 3 tablespoons Extra-virgin olive oil
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and thoroughly dry the mixed baby greens. Place them in a large salad bowl.

Step 2

Slice the cherry tomatoes in half and add them to the bowl.

Step 3

Peel the cucumber if desired, then slice it thinly into rounds. Add the cucumber slices to the bowl.

Step 4

Thinly slice the red onion into very fine rings and add to the salad. If the onion is strong, soak the slices in cold water for 5 minutes before adding to reduce the sharpness.

Trim the ends of the radishes and thinly slice them into rounds. Add them to the mix.

Sprinkle the crumbled goat cheese and toasted walnuts over the top of the salad.
