Ingredients

  • 6 links Italian sausage (mild or spicy, as preferred)
  • 2 tablespoons Olive oil
  • 2 large Red bell peppers
  • 2 large Green bell peppers
  • 1 large Yellow bell peppers
  • 1 large Onion
  • 3 Garlic cloves
  • 28 ounces Crushed tomatoes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Crushed red pepper flakes (optional)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the sausage links to the skillet and brown them on all sides for about 6-8 minutes. Remove the sausages from the skillet and set them aside. They do not need to be fully cooked at this stage.

Step 3

Slice the red, green, and yellow bell peppers into strips. Thinly slice the onion and mince the garlic.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced peppers and onion, and sauté for 6-8 minutes until softened but still slightly crisp.

Step 5

Lower the heat to medium-low and add the minced garlic. Cook for 1-2 minutes until fragrant, stirring to combine with the peppers and onions.

Step 6

Stir in the crushed tomatoes, dried oregano, dried basil, crushed red pepper flakes (if using), salt, and black pepper. Mix well to combine.

Return the sausage links to the skillet, nestling them into the tomato and pepper mixture. Cover the skillet with a lid and let everything simmer for 20-25 minutes, or until the sausages are fully cooked (internal temperature should reach 160°F).

Taste the sauce and adjust seasoning with additional salt or pepper, if needed.
