Ingredients

  • 4 pieces (approximately 6 oz each) sea bass fillets
  • 1 cup sake
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons (julienned) fresh ginger
  • 4 stalks (cut into 2-inch lengths) scallions
  • 2 cloves (thinly sliced) garlic
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 4 pieces (for serving) lemon wedges
  • 2 tablespoons (optional, for garnish) fresh cilantro leaves

Directions

Step 1

Pat the sea bass fillets dry with a paper towel and season both sides with sea salt and black pepper. Set aside.

Step 2

In a shallow, wide-bottomed pan with a lid, combine sake, soy sauce, sesame oil, julienned ginger, sliced garlic, and scallions. Bring the mixture to a gentle simmer over medium heat.

Step 3

Place the seasoned sea bass fillets into the pan, ensuring they do not overlap. Spoon some of the hot liquid over the top of the fillets.

Step 4

Cover the pan with a tight-fitting lid and lower the heat to medium-low. Steam the fish for 8-10 minutes, depending on the thickness of the fillets, or until the fish is opaque and flakes easily with a fork.

Step 5

Carefully remove the sea bass from the pan and transfer to serving plates.

Step 6

Optionally, strain the remaining liquid and drizzle a small amount over the fish for added flavor. Garnish with fresh cilantro leaves.

Step 7

Serve immediately with lemon wedges on the side for squeezing over the fish. Complement the dish with steamed rice or a light salad.
