Season the chicken thighs with salt and pepper on both sides.
In a large skillet or Dutch oven, heat the olive oil and butter over medium-high heat.
Add the chicken thighs, skin-side down, and sear for 4-5 minutes until golden brown. Flip and sear the other side for another 4-5 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, reduce the heat to medium and add the diced onion. Sauté for 3-4 minutes until softened.
