Ingredients

  • 1 cup tapioca pearls (small size)
  • 4 cups grape juice (preferably 100% natural)
  • 3 cups water
  • 1 cup sugar
  • 1 whole cinnamon stick
  • 4 cloves
  • 1 teaspoon orange zest (optional)

Directions

Step 1

Rinse the tapioca pearls in a fine sieve under cold running water to remove excess starch. Set aside.

Step 2

In a medium saucepan, bring 3 cups of water to a boil. Add the tapioca pearls and let them cook for about 10-15 minutes, stirring occasionally, until the pearls start to become translucent. The center of the pearls may still appear slightly white at this stage.

Step 3

Turn off the heat and let the tapioca sit in the water for 5 minutes to continue softening. Then, drain the pearls through a fine sieve and rinse once more with cold water. Set aside.

Step 4

In a large saucepan, combine grape juice, sugar, cinnamon stick, cloves, and optional orange zest. Heat over medium heat, stirring occasionally, until the sugar is fully dissolved.

Step 5

Add the cooked tapioca pearls to the grape juice mixture, and reduce the heat to low. Let the tapioca simmer gently for about 30-40 minutes, stirring regularly to ensure it doesn't stick to the bottom. The pearls should become fully translucent and the mixture will thicken.

Step 6

Remove the cinnamon stick, cloves, and any orange zest (if added). Let the dessert cool to room temperature before transferring it to the refrigerator to chill for at least 2 hours.

Step 7

Serve chilled in small bowls. Optionally, garnish with a dollop of whipped cream or a few fresh grapes to enhance presentation.
