Ingredients

  • 1 cup sago pearls
  • 3 cups water
  • 2 cups coconut milk
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 0.5 cup mango slices or berries (optional, for garnish)
  • 0.25 cup toasted coconut flakes (optional, for garnish)

Directions

Step 1

Rinse the sago pearls under cold running water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, bring 3 cups of water to a boil. Add the sago pearls and cook for 10 minutes, stirring frequently to prevent them from sticking.

Step 3

Reduce heat to a simmer and continue cooking the sago for another 10 minutes or until they turn translucent, stirring occasionally.

Step 4

Drain the cooked sago in a fine-mesh strainer and rinse under cold water to stop the cooking process. Set aside.

Step 5

In the same saucepan, combine coconut milk, sugar, vanilla extract, and salt. Stir well.

Step 6

Bring the mixture to a gentle boil over medium heat, then reduce the heat to low.

Step 7

Add the drained sago pearls to the coconut milk mixture. Cook for 5 minutes, stirring frequently, until the mixture thickens and is well combined.

Step 8

Remove the saucepan from heat and let the pudding cool slightly. It will thicken more as it cools.

Step 9

Transfer the sago pudding into serving bowls or cups.

Step 10

For an added touch, garnish with mango slices, berries, or toasted coconut flakes if desired.

Step 11

Serve warm or chilled. Enjoy your delicious sago pudding!
