Ingredients

  • 4 large (about 800g total) Yellow onions
  • 3 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 10 leaves Fresh sage leaves
  • 1.5 tablespoons Brown sugar
  • 2 tablespoons Balsamic vinegar
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper (freshly ground)
  • 2 tablespoons Water

Directions

Step 1

Peel the onions and cut them into thin slices, about 1/8-inch thick.

Step 2

Heat a large, heavy-bottomed skillet over medium-low heat. Add the butter and olive oil, allowing the butter to melt completely.

Step 3

Add the sliced onions to the skillet and stir to coat them evenly in the butter and oil. Cook on medium-low heat, stirring occasionally, for about 15 to 20 minutes, or until the onions are soft and golden brown.

Step 4

While the onions are cooking, finely chop the sage leaves.

Step 5

Add the sage, brown sugar, balsamic vinegar, salt, and pepper to the skillet with the onions. Stir well to combine.

Step 6

Pour in the water to deglaze the pan, scraping up any caramelized bits from the bottom of the skillet. Continue cooking for another 5 to 10 minutes, stirring frequently, until the onions are rich, dark, and glossy.

Step 7

Taste and adjust seasoning with more salt or pepper if needed.

Step 8

Remove the compote from the heat and let it cool slightly. Serve warm or at room temperature as a condiment or topping.
