Ingredients

  • 16 oz Ground pork
  • 1 tbsp Fresh sage, finely chopped
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tsp Brown sugar
  • 0.25 tsp Ground nutmeg
  • 0.25 tsp Crushed red pepper flakes
  • 0.5 tsp Garlic powder
  • 0.25 tsp Ground thyme
  • 2 tbsp Cold water

Directions

Step 1

In a large mixing bowl, combine the ground pork, fresh sage, salt, black pepper, brown sugar, nutmeg, crushed red pepper flakes, garlic powder, and ground thyme.

Step 2

Add the cold water to the mixture and use clean hands to gently mix until the spices are fully incorporated and evenly distributed throughout the meat. Be careful not to overmix, as this can make the sausage tough.

Step 3

Divide the sausage mixture into 8 equal portions and shape each into a patty about 2.5 inches wide and 0.5 inch thick.

Step 4

Heat a large nonstick skillet or cast-iron pan over medium heat. Lightly grease the pan with a small amount of cooking oil, if needed.

Step 5

Cook the sausage patties in the skillet for about 4–5 minutes per side, or until they are nicely browned and the internal temperature reaches 160°F (71°C). Avoid overcrowding the pan; you may need to cook in batches.

Step 6

Transfer the cooked patties to a plate lined with paper towels to drain excess grease.

Step 7

Serve hot with your favorite breakfast sides, or let cool and store in an airtight container in the fridge for up to 4 days or in the freezer for up to 2 months.
