Ingredients

  • 1000 grams pumpkin
  • 30 grams unsalted butter
  • 6 leaves fresh sage leaves
  • 60 milliliters milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon nutmeg

Directions

Step 1

Peel the pumpkin, remove the seeds, and cut it into 2.5 cm (1-inch) cubes.

Step 2

Bring a large pot of water to a boil. Add 1 teaspoon of salt to the water.

Step 3

Add the pumpkin cubes to the boiling water and cook for 12-15 minutes, or until tender when pierced with a fork.

Step 4

While the pumpkin is cooking, heat a small skillet over medium-low heat. Melt the butter and add the fresh sage leaves. Cook for 1-2 minutes, stirring occasionally, until the butter is fragrant and the sage leaves are crisp. Remove from heat and set aside.

Step 5

Once the pumpkin is tender, drain it thoroughly and return it to the pot.

Step 6

Mash the pumpkin using a potato masher or a fork until smooth. Alternatively, use a food processor for a creamier texture.

Step 7

Pour the melted butter and crisped sage leaves over the mash, reserving a few sage leaves for garnish if desired.

Step 8

Stir in the milk, black pepper, and nutmeg. Adjust seasoning with salt and pepper to taste.

Step 9

Serve warm, garnished with the reserved sage leaves and a light sprinkle of nutmeg, if desired.
