Ingredients

  • 200 grams Kasseri, Kefalotyri, or Graviera cheese (or other firm Greek cheese)
  • 50 grams All-purpose flour
  • 2 tablespoons Olive oil
  • 1 Lemon
  • 45 milliliters Brandy or ouzo
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

1. Cut the cheese into a piece approximately 1 cm thick and about 10-12 cm long. Pat it dry with paper towels to remove excess moisture.

2. Place the flour on a plate and dredge the cheese on all sides, shaking off any excess flour.

3. Heat the olive oil in a small, heavy, non-stick skillet over medium-high heat until it shimmers but does not smoke.

4. Add the floured cheese to the skillet and sear for 2-3 minutes on the first side until golden brown. Carefully flip the cheese and sear the other side for 2-3 minutes until golden and the cheese is slightly melty.
