Cut the Kefalotyri or Graviera cheese into a thick slice, about 1.5 cm (0.6 inches) or 3/4 inch thick.
Place the flour on a plate and lightly dredge the cheese in the flour, making sure to coat all sides evenly. Shake off any excess flour.
