Ingredients

  • 2 cups Basmati rice
  • 4 cups Water
  • 0.25 teaspoon Saffron threads

  • 0.5 cup Dried apricots
  • 1 teaspoon Curry powder
  • 0.25 cup Fresh orange juice
  • 2 teaspoons Honey
  • 3 tablespoons Olive oil
  • 1 each Garlic clove, minced
  • 2 tablespoons Fresh cilantro, chopped
  • 0.25 cup Slivered almonds (optional)

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

Step 2

In a small bowl, steep the saffron threads in 2 tablespoons of warm water for 5 minutes.

Step 3

In a medium saucepan, bring 4 cups of water to a boil. Add the rice, saffron water, butter, and salt. Stir to combine.
