Ingredients

  • 1.5 cups basmati rice
  • 2 cups water
  • 1 cup chicken or vegetable broth
  • 0.5 teaspoons saffron threads
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 0.5 yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 cinnamon stick
  • 1 teaspoon salt
  • 0.25 cup slivered almonds (optional, toasted)
  • 0.25 cup dried currants or raisins (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Rinse the basmati rice in cold water until the water runs clear to remove excess starch. Drain and set aside.

Step 2

In a small bowl, combine 2 tablespoons of warm water and the saffron threads. Allow the saffron to bloom for 5 minutes.

Step 3

Heat the butter and olive oil in a large saucepan or deep skillet over medium heat.

Step 4

Add the finely chopped yellow onion and cook, stirring frequently, until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, until fragrant.

Step 5

Stir in the rinsed basmati rice and cook for 2-3 minutes, coating the grains in the butter and oil mixture.

Step 6

Add the saffron water, chicken or vegetable broth, water, bay leaf, cinnamon stick, and salt to the saucepan. Stir to combine.

Step 7

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-17 minutes, or until the rice is tender and the liquid is fully absorbed.

Step 8

Remove the saucepan from heat and let it sit, covered, for 5 minutes to allow the rice to steam.

Step 9

Remove the bay leaf and cinnamon stick. Fluff the rice gently with a fork.

Step 10

If desired, fold in the toasted slivered almonds and dried currants or raisins for added texture and flavor.

Step 11

Transfer the saffron rice pilaf to a serving dish and garnish with chopped fresh parsley before serving.
