Ingredients

  • 1 cup couscous
  • 1.25 cups water
  • 0.25 teaspoons saffron threads
  • 0.25 cup golden raisins
  • 2 tablespoons olive oil
  • 0.25 cup fresh mint leaves, chopped
  • 0.5 teaspoons salt
  • 0.25 teaspoons pepper
  • 1 teaspoon lemon zest
  • 0.25 cup slivered almonds (optional)

Directions

Step 1

Bring 1.25 cups of water to a boil in a medium saucepan over high heat.

Step 2

Reduce the heat to low and add the saffron threads to the water. Let them steep for 1 minute to release their vibrant color and flavor.

Step 3

Stir in the raisins, olive oil, and salt, then slowly add the couscous into the pan. Stir to combine.

Step 4

Remove the saucepan from heat, cover, and let the couscous sit undisturbed for 5 minutes to absorb the water.

Step 5

Fluff the couscous with a fork to separate the grains. Add the chopped fresh mint, lemon zest, and pepper, stirring gently to mix.

Step 6

If desired, toast the slivered almonds in a dry skillet over medium heat for 2-3 minutes until golden, then sprinkle them on top of the couscous.

Step 7

Serve warm or at room temperature as a side dish or light entree. Enjoy!
