Ingredients

  • 150 g Dark chocolate, chopped
  • 120 g Unsalted butter, softened
  • 100 g Caster sugar
  • 4 large Egg yolks
  • 4 large Egg whites
  • 50 g Powdered sugar
  • 100 g All-purpose flour, sifted
  • 200 g Apricot jam
  • 100 ml Heavy cream
  • 150 g Additional dark chocolate, chopped (for glaze)

Directions

Step 1

Preheat the oven to 175°C (350°F) and line an 8x8-inch square baking pan with parchment paper.

Step 2

Melt the 150g of chopped dark chocolate in a double boiler or in the microwave in 20-second increments, stirring until smooth. Set aside to cool slightly.

Step 3

In a large bowl, beat the unsalted butter and caster sugar together until light and fluffy.

Step 4

Add the egg yolks one at a time, beating well after each addition. Mix in the melted chocolate until fully incorporated.

Step 5

In a separate clean bowl, beat the egg whites with the powdered sugar until stiff peaks form.

Step 6

Gently fold the beaten egg whites into the chocolate mixture in three batches, alternating with the sifted flour. Be careful not to overmix.

Step 7

Pour the batter into the prepared baking pan and smooth the top with a spatula.

Step 8

Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.

Once cooled, carefully remove the cake from the pan and trim the edges for evenness if necessary. Cut the cake into 24 small squares.

Heat the apricot jam in a small saucepan over low heat until warm and slightly runny. Brush a thin layer of jam over the top of each cake square.

For the glaze, heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat and pour over the additional 150g of chopped dark chocolate. Let sit for 2 minutes, then stir until smooth and glossy.

Using a fork or dipping tool, dip each cake square into the chocolate glaze, ensuring all sides are coated. Place on a wire rack to set.
