Ingredients

  • 1 cup Sabudana (Tapioca Pearls)
  • 2 medium-sized, boiled and peeled Potatoes
  • 0.5 cup, roasted and coarsely ground Peanuts
  • 2 finely chopped Green Chilies
  • 1 teaspoon, grated Ginger
  • 1 teaspoon Cumin Seeds
  • 2 tablespoons, finely chopped Coriander Leaves
  • 1 tablespoon Lemon Juice
  • 1 teaspoon or to taste Salt
  • 1 cup, for frying Oil

Directions

Step 1

Rinse 1 cup of sabudana under running water until the water runs clear. This removes excess starch.

Step 2

Soak the sabudana in enough water to cover them for about 4-6 hours or until they double in size. Drain any excess water after soaking.

Step 3

Meanwhile, boil 2 medium-sized potatoes. Once boiled, peel and mash them in a large mixing bowl.

Step 4

Add the soaked and drained sabudana, 0.5 cup coarsely ground roasted peanuts, 2 finely chopped green chilies, and 1 teaspoon of grated ginger to the mashed potatoes.

Step 5

Add 1 teaspoon of cumin seeds, 2 tablespoons of finely chopped coriander leaves, 1 tablespoon of lemon juice, and 1 teaspoon of salt to the mixture.

Step 6

Mix all the ingredients thoroughly until they are well combined.

Divide the mixture into equal portions and shape each portion into a small flat round disc or vada.

Heat 1 cup of oil in a deep frying pan over medium heat.

Once the oil is hot, carefully slide in the vadas. Fry them in batches, turning occasionally, until they are golden brown and crispy on all sides.
