Ingredients

  • 2 cups Graham cracker crumbs
  • 0.5 cups Unsalted butter, melted
  • 3 tablespoons Granulated sugar (for crust)
  • 24 ounces Cream cheese, softened
  • 1 cup Granulated sugar (for filling)
  • 0.5 cup Unsweetened cocoa powder
  • 8 ounces Semisweet chocolate, melted and cooled
  • 1 teaspoon Vanilla extract
  • 3 units Large eggs
  • 0.5 cup Heavy cream
  • 2 cups Mini marshmallows
  • 0.25 cup Semisweet chocolate chips (optional, for garnish)

Directions

Step 1

Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.

Step 2

In a medium bowl, combine graham cracker crumbs, melted butter, and 3 tablespoons of granulated sugar. Mix until the crumbs are evenly coated.

Step 3

Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove and let cool.

Step 4

In a large mixing bowl, beat the softened cream cheese and 1 cup of granulated sugar together until smooth and creamy.

Step 5

Add cocoa powder, melted chocolate, and vanilla extract. Mix until fully incorporated.

Step 6

Add the eggs one at a time, beating on low speed after each addition. Be careful not to overmix.

Step 7

Gently stir in the heavy cream using a spatula, ensuring the batter is well combined.

Step 8

Pour the filling over the cooled crust in the springform pan and smooth the top.

Step 9

Bake the cheesecake in the preheated oven for 60-70 minutes, or until the center is set but slightly jiggly.

Step 10

Remove the cheesecake from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.

Step 11

Before serving, sprinkle mini marshmallows over the top of the cheesecake.

Step 12

Use a kitchen torch to toast the marshmallows until golden brown. If you don't have a torch, you can place the cheesecake under the broiler for a few seconds—watch carefully to avoid burning.

Step 13

Optional: Sprinkle chocolate chips over the toasted marshmallows for a finishing touch.

Step 14

Release the cheesecake from the springform pan, slice, and serve. Enjoy your S'mores Cheesecake!
