Ingredients

  • 0.75 cups unsalted butter
  • 1.5 cups semi-sweet chocolate chips
  • 1.25 cups granulated sugar
  • 0.5 cups light brown sugar
  • 3 pieces large eggs
  • 1.5 teaspoons vanilla extract
  • 0.75 cups all-purpose flour
  • 0.25 cups unsweetened cocoa powder
  • 0.5 teaspoons salt
  • 6 sheets graham crackers
  • 2 cups marshmallows
  • 0.25 cups mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper, leaving an overhang for easy lifting.

Step 2

In a microwave-safe bowl, melt the butter and semi-sweet chocolate chips in 30-second increments, stirring between each interval, until smooth. Let the mixture cool for 5 minutes.

Step 3

Whisk in the granulated sugar and light brown sugar until fully combined. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.

Step 4

In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet ingredients until just combined, taking care not to overmix.

Step 5

Pour half of the brownie batter into the prepared pan, spreading it into an even layer with a spatula.

Step 6

Arrange the graham crackers on top of the batter, breaking them if necessary to fit evenly across the pan.

Step 7

Spread the remaining brownie batter over the graham crackers, smoothing it with a spatula to ensure even coverage.

Step 8

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Remove the pan from the oven and turn on the broiler.

Step 9

Immediately sprinkle the marshmallows evenly over the top of the brownies. If desired, sprinkle mini chocolate chips on top for extra chocolate flavor.

Step 10

Place the pan under the broiler for 1-2 minutes, watching closely, until the marshmallows are golden brown and toasted. Do not walk away, as they can burn quickly.

Step 11

Allow the brownies to cool completely in the pan before using the parchment paper overhang to lift them out. Cut into 12 squares and serve.
