Ingredients

  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Granulated sugar
  • 1 teaspoon Salt
  • 0.5 cup Unsalted butter (cold)
  • 0.75 cup Whole milk
  • 1 pound Breakfast sausage (pork or turkey)
  • 0.33 cup All-purpose flour (for gravy)
  • 3 cups Whole milk (for gravy)
  • 1 teaspoon Salt (for gravy)
  • 1 teaspoon Black pepper (freshly ground)

Directions

Step 1

Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of sugar, and 1 teaspoon of salt.

Step 3

Cut the cold butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Step 4

Gradually add 3/4 cup of milk to the flour mixture, stirring gently with a spoon until a dough forms. Be careful not to overmix.

Step 5

Turn the dough out onto a floured surface and gently knead it 3–4 times. Pat the dough into a rectangle about 1-inch thick.

Step 6

Using a round biscuit cutter (or the rim of a glass), cut out biscuits and place them on the prepared baking sheet. Reshape the scraps of dough as needed to cut more biscuits.

Step 7

Bake the biscuits in the preheated oven for 12–15 minutes, or until golden brown.

Step 8

While the biscuits bake, prepare the sausage gravy. Start by browning 1 pound of breakfast sausage in a large skillet over medium heat, breaking it into crumbles as it cooks.

Step 9

Once the sausage is fully cooked, reduce the heat to medium-low and sprinkle 1/3 cup of flour evenly over the sausage. Stir well to coat the sausage in the flour and let it cook for about 1–2 minutes.

Step 10

Gradually pour in 3 cups of milk, stirring constantly to ensure there are no lumps. Bring the mixture to a gentle simmer.

Step 11

Season the gravy with 1 teaspoon of salt and 1 teaspoon of freshly ground black pepper (adjust to taste). Cook the gravy, stirring occasionally, until thickened (about 5–7 minutes).

Step 12

When the biscuits are done baking, remove them from the oven and let them cool for a minute.

Step 13

Split the warm biscuits in half and ladle the hot sausage gravy over them. Serve immediately and enjoy Ryen's favorite comfort food!
