Ingredients

  • 16 ounces Cheese ravioli
  • 2 tablespoons Olive oil
  • 12 ounces Shrimp, peeled and deveined
  • 4 Garlic cloves, minced
  • 0.5 teaspoons Crushed red pepper flakes (optional)
  • 14 ounces Canned diced tomatoes
  • 1 cup Heavy cream
  • 0.5 cups Grated Parmesan cheese
  • 0.25 cups Fresh basil leaves, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the cheese ravioli according to the package instructions, usually about 4-6 minutes. Reserve 1/2 cup of the pasta water, drain the ravioli, and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook for 2-3 minutes on each side, or until pink and fully cooked. Remove the shrimp from the skillet and set aside.

Step 3

In the same skillet, add the minced garlic and crushed red pepper flakes (if using). Sauté for 1-2 minutes until fragrant, being careful not to let the garlic burn.

Step 4

Stir in the diced tomatoes along with their juices and cook for 5 minutes, allowing the mixture to reduce slightly. Use a spoon to lightly crush some of the tomatoes for a smoother sauce.

Step 5

Reduce the heat to low and stir in the heavy cream, Parmesan cheese, salt, and black pepper. Cook for another 3-4 minutes, stirring frequently, until the sauce is smooth and creamy.

Step 6

Add the cooked shrimp back into the skillet, then toss in the cooked ravioli. If the sauce is too thick, stir in a few tablespoons of the reserved pasta water until the desired consistency is reached.

Step 7

Remove the skillet from heat and stir in the chopped fresh basil. Taste the sauce and adjust seasoning with additional salt or pepper if needed.

Step 8

Serve the ravioli immediately, garnished with extra Parmesan cheese and basil if desired.
