Ingredients

  • 6 large russet potatoes
  • 4 tablespoons butter
  • 1.25 cups heavy cream
  • 2 cups sharp cheddar cheese
  • 1 cup sour cream
  • 4 stalks green onions, thinly sliced
  • 6 slices bacon, cooked and crumbled
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 0.5 cup parmesan cheese, grated

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish with butter or non-stick spray.

Step 2

Peel and chop the russet potatoes into even chunks. Place them in a large pot, cover with water, and add a pinch of salt.

Step 3

Bring the water to a boil over high heat, then lower to a simmer. Cook the potatoes for 15-20 minutes or until fork-tender.

Step 4

While the potatoes are cooking, cook the bacon in a skillet over medium heat until crispy. Set aside on paper towels to cool, then crumble into small pieces.

Step 5

Drain the cooked potatoes and transfer them back into the pot. Mash the potatoes using a potato masher until smooth.

Step 6

Add butter, heavy cream, sour cream, and 1 1/2 cups of the sharp cheddar cheese into the mashed potatoes. Stir until the mixture is creamy and well combined.

Step 7

Season the potato mixture with salt and black pepper to taste. Fold in the green onions and crumbled bacon, reserving a portion of each for garnishing.

Step 8

Transfer the potato mixture into the prepared casserole dish and spread it evenly. Sprinkle the remaining sharp cheddar cheese and grated parmesan cheese over the top.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the top is bubbly and golden brown.

Step 10

Remove from the oven and let the casserole rest for 5 minutes. Garnish with the reserved green onions and bacon pieces before serving. Enjoy!
