Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 0.5 cups unsalted butter
  • 8 ounces cream cheese, softened
  • 15 ounces pumpkin puree
  • 4 eggs
  • 14 ounces sweetened condensed milk
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons ground ginger
  • 0.25 teaspoons ground nutmeg
  • 0.25 teaspoons salt
  • 0 for serving whipped cream (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside.

Step 2

In a medium bowl, combine the flour and granulated sugar. Cut in the unsalted butter using a pastry blender or fork until the mixture resembles coarse crumbs.

Step 3

Press the crumbly mixture evenly into the bottom of the prepared baking dish to form the crust. Bake for 15 minutes, then remove from the oven and set aside.

Step 4

In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the pumpkin puree and mix until well combined.

Step 5

Add the eggs, one at a time, mixing well after each addition. Then, pour in the sweetened condensed milk and stir until the mixture is smooth.

Step 6

Stir in the cinnamon, ginger, nutmeg, and salt. Mix until the spices are fully incorporated into the pumpkin mixture.

Step 7

Pour the pumpkin filling over the baked crust in the baking dish, spreading it out evenly.

Step 8

Return the dish to the oven and bake for 40 minutes, or until the filling is set and no longer jiggles in the center.

Step 9

Remove the dessert from the oven and allow it to cool completely. Once cooled, refrigerate for at least 2 hours to chill and set further.

Step 10

Cut into squares and serve chilled. Top with whipped cream if desired.
