Ingredients

  • 1 medium head Green cabbage
  • 2 medium Carrots
  • 0.5 medium Red onion
  • 1 cup Mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Celery seed
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Remove the outer leaves from the cabbage and rinse it under cold water. Cut the cabbage into quarters and remove the core. Using a sharp knife or a mandoline slicer, thinly slice the cabbage into fine shreds. Place the shredded cabbage in a large mixing bowl.

Step 2

Peel the carrots and grate them using a box grater or a food processor. Add the grated carrots to the mixing bowl with the cabbage.

Step 3

Peel and thinly slice the red onion into half-moon slices. Add the onion to the cabbage and carrots.

Step 4

In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, honey, celery seed, salt, and black pepper until smooth and well combined.

Step 5

Pour the dressing over the cabbage mixture and toss thoroughly until the vegetables are evenly coated.

Step 6

Taste and adjust seasoning with additional salt or pepper if needed.

Step 7

Cover the bowl with plastic wrap or transfer the coleslaw to an airtight container. Refrigerate for at least 1 hour to allow the flavors to meld together.

Step 8

Before serving, give the coleslaw a quick toss to redistribute the dressing. Serve chilled as a side dish or use as a topping for sandwiches or burgers.
