Ingredients

  • 2 medium (about 2 lbs total) rutabaga
  • 3 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 0.5 cups heavy cream
  • 2 large eggs
  • 2 tablespoons brown sugar
  • 0.25 teaspoons ground nutmeg
  • 0.25 teaspoons ground cinnamon
  • 0.5 teaspoons salt
  • 0.75 cups crumbled bread crumbs

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish lightly with butter or non-stick spray.

Step 2

Peel the rutabagas and chop them into evenly sized chunks. Place them in a pot of salted water and bring to a boil over medium-high heat.

Step 3

Cook the rutabagas for 20–25 minutes or until very tender. Drain the water and mash the rutabagas until smooth. Set them aside to cool slightly.

Step 4

In a small saucepan over medium heat, melt the butter. Stir in the flour and cook for 1–2 minutes, whisking continuously, to form a roux (a thick paste).

Step 5

Gradually add the milk and cream to the roux, whisking constantly to create a smooth white sauce. Cook for 3–5 minutes, or until the sauce thickens slightly. Remove from heat.

Step 6

In a medium mixing bowl, whisk together the eggs, brown sugar, nutmeg, cinnamon, and salt. Slowly whisk the white sauce into the egg mixture, a little at a time, to temper the eggs.

Step 7

Fold the mashed rutabagas into the mixture until fully combined, then transfer it to the prepared baking dish.

Step 8

Sprinkle the bread crumbs evenly over the top of the pudding. If desired, dab small pieces of butter on top of the bread crumbs for added richness.

Step 9

Bake for 40–50 minutes, or until the top is golden brown and the pudding is set in the center.

Allow to cool for 5–10 minutes before serving. Garnish with fresh herbs (optional) and enjoy!
