Ingredients

  • 4 whole Roma tomatoes
  • 2 whole Jalapeño peppers
  • 2 whole Garlic cloves
  • 1 medium White onion
  • 0.25 cup Cilantro
  • 1 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Vegetable oil

Directions

Step 1

Preheat a dry skillet or grill pan over medium-high heat. No oil is necessary.

Step 2

Place the Roma tomatoes, jalapeños, garlic cloves (in their skin), and onion (cut in half, skin on) directly on the hot surface of the skillet.

Step 3

Char the vegetables on all sides, turning occasionally. The garlic and onion should be removed after about 5-7 minutes, once softened and blackened in spots. The tomatoes and jalapeños should be charred thoroughly, about 10-12 minutes in total.

Step 4

Once roasted, let the vegetables cool slightly. Peel the skins off the garlic and onion and discard them.

Step 5

In a molcajete (or blender if using), start by grinding the peeled garlic cloves with the salt to form a paste.

Step 6

Add the jalapeños next, grinding or pulsing them until smooth. Adjust the heat level by removing the seeds based on your spice preference.

Step 7

Add the onion and grind it into the paste, followed by the tomatoes. Crush them to your desired consistency—rustic and chunky or smoother.

Step 8

Stir in the chopped cilantro, lime juice, and a teaspoon of vegetable oil. Taste and adjust salt as needed.

Step 9

Serve immediately with tortilla chips or as a topping for tacos, grilled meats, or eggs.
