Ingredients

  • 2 cups Fresh basil leaves
  • 0.5 cups Extra virgin olive oil
  • 0.25 cups Pine nuts
  • 2 cloves Garlic cloves
  • 0.5 cups Grated Parmesan cheese
  • 0.5 teaspoons Coarse sea salt
  • 0.25 teaspoons Freshly ground black pepper
  • 12 ounces Pasta (spaghetti, linguine, or penne)
  • 1 tablespoons Salt (for pasta water)
  • 0.5 cups Reserved pasta water

Directions

Step 1

Bring a large pot of water to a boil. Add 1 tablespoon of salt to the boiling water and cook your pasta of choice according to the package instructions until al dente. Reserve 1/2 cup of pasta water, drain the pasta, and set aside.

Step 2

While the pasta cooks, make the Genovese basil pesto. In a dry skillet, lightly toast the pine nuts over medium heat for 2–3 minutes, stirring frequently to prevent burning. Once golden brown, remove from heat and let cool.

Step 3

In a food processor, combine the fresh basil leaves, toasted pine nuts, garlic cloves, grated Parmesan cheese, coarse sea salt, and ground black pepper. Pulse until the mixture forms a coarse paste.

With the food processor running, slowly drizzle in the extra virgin olive oil until the pesto reaches a smooth and creamy consistency. Stop occasionally to scrape down the sides of the processor bowl for even blending. Taste and adjust seasoning as necessary.
