Ingredients

  • 1 sheet Puff pastry sheet
  • 8 slices Thick-cut bacon
  • 2 medium Granny Smith apples
  • 1 large Yellow onion
  • 1 tablespoon Olive oil
  • 2 teaspoons Thyme leaves
  • 1 tablespoon Honey
  • 1 cup Gruyère cheese, shredded
  • 1 large Egg
  • 1 tablespoon Whole milk
  • 1 tablespoon All-purpose flour
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Roll out the puff pastry sheet on a lightly floured surface to smooth any creases. Transfer the pastry to the prepared baking sheet and use a knife to score a 1-inch border around the edges (do not cut all the way through). Prick the interior with a fork to prevent puffing.

Step 3

In a skillet over medium heat, cook the bacon until crispy. Transfer to a paper towel-lined plate to drain. Once cool, roughly chop the bacon into bite-sized pieces.

Step 4

While the bacon is cooking, peel and thinly slice the apples into 1/8-inch slices. Set aside.

Step 5

Peel and thinly slice the onion. Heat the olive oil in a separate skillet over medium heat. Add the onion and cook for 10-12 minutes, stirring occasionally, until they are softened and golden brown. Stir in the thyme leaves during the last minute of cooking.

Step 6

In a small bowl, whisk together the egg and milk to make an egg wash.

Step 7

Sprinkle the shredded Gruyère cheese evenly over the interior of the puff pastry. Arrange the caramelized onions on top of the cheese in an even layer.

Step 8

Layer the apple slices over the onions, slightly overlapping them. Drizzle the honey over the apples, then add the chopped bacon pieces on top.

Step 9

Brush the edges of the puff pastry with the egg wash. Sprinkle the salt and black pepper over the entire tart.

Step 10

Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and puffed. Rotate the baking sheet halfway through for even cooking.

Step 11

Remove the tart from the oven and let it cool for 5-10 minutes. Slice into squares or wedges and serve warm.
