Ingredients

  • 300 g Chicken breast
  • 2 medium Potatoes
  • 2 medium Carrots
  • 150 g Green peas (frozen or canned)
  • 3 medium Pickles
  • 200 g Mayonnaise
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley (optional, for garnish)

Directions

Step 1

Place the chicken breast in a pot of water with a pinch of salt. Bring to a boil, reduce heat, and simmer for 15-20 minutes or until fully cooked. Remove the chicken from the water and let it cool.

Step 2

While the chicken is cooking, peel the potatoes and carrots. Cut them into small, uniform cubes.

Step 3

Bring a second pot of water to a boil. Add the cubed potatoes and carrots, and cook for 8-10 minutes or until just tender. Drain and set aside to cool.

If using frozen green peas, blanch them in boiling water for 1-2 minutes, then drain and let cool. If using canned peas, simply drain and rinse them.

Dice the pickles into small cubes to match the size of the potatoes and carrots.

Shred or dice the cooled chicken breast into small pieces.

In a large mixing bowl, combine the chicken, cooked potatoes, carrots, green peas, and pickles.
